Ingredients
  

1 cup pitted dates, chopped

1 cup walnuts, finely chopped

2 cups all-purpose flour

1 cup unsalted butter, softened

1 cup powdered sugar

1 large egg

1 teaspoon vanilla extract

1/2 teaspoon baking powder

1/4 teaspoon salt

Zest of 1 orange (optional)

1 teaspoon ground cinnamon (optional for flavor)

Instructions
 

In a small pot, combine chopped dates and a splash of water. Cook over low heat until dates soften, about 5 minutes. Let it cool.

    In a mixing bowl, cream together the softened butter and powdered sugar until light and fluffy.

      Beat in the egg and vanilla extract, mixing thoroughly.

        In a separate bowl, combine flour, baking powder, salt, and cinnamon. Gradually add dry ingredients to butter mixture, blending well.

          Fold in the chopped walnuts and cooled date mixture. If using orange zest, mix it in at this point.

            Divide the dough into two equal halves. Roll each half into a log about 1.5 inches in diameter. Wrap each log in plastic wrap and refrigerate for at least 2 hours or overnight.

              Preheat the oven to 350°F (175°C). Line baking sheets with parchment paper.

                Remove the dough from the refrigerator and slice each log into 1/4 inch thick rounds.

                  Place the rounds on prepared baking sheets, leaving some space between them.

                    Bake for 10-12 minutes or until edges are golden. Allow cookies to cool on wire racks.
