5 oz (140g) high-quality dark chocolate (70% cocoa), chopped

3 tablespoons unsalted butter, cut into pieces

3 large eggs, separated (room temperature)

1/4 cup granulated sugar

1 teaspoon vanilla extract

1/4 cup heavy whipping cream

Pinch of sea salt

Optional toppings: whipped cream, fresh raspberries or strawberries, cocoa powder, or chocolate shavings

Instructions
 

Melt the Chocolate: In a heatproof bowl, combine the chopped dark chocolate and butter. Set the bowl over a saucepan of simmering water (double boiler method) and stir occasionally until melted and smooth. Remove from heat and let cool slightly.

    Whisk the Yolks: In a separate bowl, whisk the egg yolks with granulated sugar and vanilla extract until the mixture is pale and slightly thickened (about 2-3 minutes).

      Combine Mixtures: Gradually add the melted chocolate mixture to the egg yolks, stirring continuously until smooth and fully combined.

        Beat the Egg Whites: In a clean bowl, beat the egg whites with a pinch of sea salt until soft peaks form. Gradually add a tablespoon of sugar and continue to beat until stiff peaks form.

          Fold In: Gently fold one-third of the whipped egg whites into the chocolate mixture to lighten it. Then, carefully fold in the remaining egg whites until no white streaks remain. Be cautious not to deflate the mixture.

            Whip the Cream: In another bowl, whip the heavy cream until soft peaks form. Gently fold the whipped cream into the chocolate mousse until well incorporated.

              Chill: Spoon the mousse into serving glasses or ramekins and refrigerate for at least 2 hours or until set.

                Serve: Before serving, top with optional whipped cream, fresh berries, or dust with cocoa powder or chocolate shavings for an elegant presentation.
