Ingredients
  

4 cups vegetable broth

2 cups diced tomatoes (canned or fresh)

1 cup diced carrots

1 cup chopped celery

1 cup chopped potatoes (russet or Yukon Gold)

1 cup green beans (fresh or frozen)

1 cup corn (fresh, frozen, or canned)

1 medium onion, chopped

3 garlic cloves, minced

1 teaspoon dried thyme

1 teaspoon dried basil

1 teaspoon smoked paprika

Salt and pepper to taste

2 cups fresh spinach or kale

1 tablespoon olive oil

1 bay leaf

Optional: fresh parsley for garnish

Instructions
 

In a large crock pot, add the vegetable broth, diced tomatoes, carrots, celery, potatoes, green beans, corn, onion, and garlic.

    Sprinkle in the dried thyme, basil, smoked paprika, salt, and pepper. Stir well to combine.

      Drizzle the olive oil over the mixture and add the bay leaf.

        Cover the crock pot and set it to cook on low for 6-8 hours or on high for 3-4 hours.

          About 30 minutes before serving, stir in the fresh spinach or kale until just wilted.

            Once done, remove the bay leaf. Taste and adjust the seasoning if necessary.

              Serve hot, garnished with fresh parsley if desired.
