2 duck breasts, skin-on

Salt and freshly ground black pepper

1 tablespoon vegetable oil

1 cup fresh or frozen cherries, pitted

1/2 cup red wine (pinot noir works well)

2 tablespoons honey

1 tablespoon balsamic vinegar

1 teaspoon fresh thyme leaves

1 tablespoon unsalted butter

Prepare the Duck Breasts: Score the skin of the duck breasts in a crisscross pattern, being careful not to cut into the meat. Season both sides with salt and pepper.

    Sear the Duck: In a large skillet (preferably cast iron), heat the vegetable oil over medium-high heat. Place the duck breasts skin-side down in the hot skillet. Reduce the heat to medium and let the duck cook undisturbed for about 6-8 minutes, or until the skin is crispy and golden brown.

      Finish Cooking the Duck: Flip the duck breasts and cook for an additional 4-5 minutes, or until they reach your desired level of doneness (medium-rare is about 135°F or 57°C). Remove the duck from the skillet and let it rest on a cutting board while you make the sauce.

        Make the Cherry Sauce: In the same skillet, discard excess duck fat, leaving about 1 tablespoon. Add the cherries, red wine, honey, balsamic vinegar, and thyme leaves. Bring to a simmer and cook for about 5-7 minutes, or until the sauce has thickened slightly and the cherries have softened.

          Finish the Sauce: Stir in the butter until melted and the sauce is shiny. Season with salt and pepper to taste.

            Slice the Duck: After the duck has rested for about 5 minutes, slice it thinly against the grain.

              Serve: Arrange the sliced duck breast on a serving plate and spoon the cherry sauce over the top. Pair with your choice of sides, such as roasted vegetables or creamy mashed potatoes.
