Ingredients
  

1 pound salmon fillet, skinless and boneless

1 cup panko breadcrumbs

1/2 cup all-purpose flour

2 large eggs, beaten

1/2 teaspoon garlic powder

1/2 teaspoon onion powder

Salt and pepper, to taste

Vegetable oil, for frying

1/2 cup mayonnaise

2 tablespoons sweet chili sauce

1 tablespoon sriracha (or to taste)

Green onions, for garnish

Instructions
 

Preparation: Start by cutting the salmon fillet into bite-sized cubes (about 1 inch).

    Coating: In three separate bowls, place the flour mixed with garlic powder, and onion powder in one, the beaten eggs in another, and the panko breadcrumbs in the last one.

      Dredging: Dip each salmon cube first into the flour, shaking off the excess, then into the beaten eggs, and finally coat with panko breadcrumbs, pressing them lightly to adhere.

        Frying: In a large skillet, heat vegetable oil over medium heat. Once hot, carefully add the salmon bites in batches, being sure not to overcrowd the pan.

          Cooking: Fry the salmon bites for 3-4 minutes on each side, or until golden brown and crispy. Remove and place them on paper towels to drain any excess oil.

            Sauce Preparation: In a small bowl, mix together the mayonnaise, sweet chili sauce, and sriracha until well combined.

              Serving: Serve the crispy salmon bites warm with the bang bang sauce drizzled on top or on the side, garnished with chopped green onions.
