Ingredients
  

2 cups rhubarb, chopped

1 cup granulated sugar

1/4 cup all-purpose flour

1/2 teaspoon vanilla extract

1/4 teaspoon salt

4 large eggs

1 cup heavy cream

1 pre-made pie crust or shortbread crust

Powdered sugar for dusting (optional)

Instructions
 

Preheat the oven to 350°F (175°C) and prepare a 9x13 inch baking dish by greasing it lightly.

    In a medium bowl, combine the chopped rhubarb and granulated sugar, letting it sit for about 15 minutes to release some juices.

      In another bowl, whisk together the flour, vanilla extract, and salt. Add the eggs one at a time, whisking until smooth.

        Stir in the heavy cream until fully combined.

          Pour the mixture over the rhubarb and gently fold to combine.

            Place the crust in the bottom of the prepared baking dish, then pour the rhubarb custard mixture over the crust.

              Bake for 40-45 minutes, or until the center is set and a toothpick inserted comes out clean.

                Allow the bars to cool completely before slicing. Dust with powdered sugar if desired before serving.
