Ingredients

1 lb boneless, skinless chicken breasts

1 cup orzo pasta

2 cups chicken broth

1 cup heavy cream

1 cup grated Parmesan cheese

2 cloves garlic, minced

1 cup baby spinach

1 tablespoon olive oil

1 teaspoon Italian seasoning

Salt and pepper to taste

Fresh parsley, chopped (for garnish)

Instructions

Prepare the Chicken: Season the chicken breasts with salt, pepper, and Italian seasoning. Heat the olive oil in a large skillet over medium heat. Add the chicken and cook for 6-7 minutes on each side, or until cooked through and golden brown. Remove from the skillet and set aside.

Cook the Orzo: In the same skillet, add the minced garlic and sauté for about 30 seconds until fragrant. Pour in the chicken broth and bring to a boil. Add the orzo pasta and reduce the heat to a simmer. Cook the orzo for about 8-10 minutes, stirring occasionally until the liquid is almost absorbed.

Make it Creamy: Pour in the heavy cream and add the grated Parmesan cheese. Stir until well combined and the cheese has melted.

Combine: Return the cooked chicken to the skillet. Add the baby spinach and stir gently until the spinach wilts and everything is heated through. Adjust seasoning with additional salt and pepper if needed.

Serve: Serve hot, garnished with fresh parsley for an added touch of color.
