1 cup orzo pasta

2 cups vegetable broth

1 tablespoon olive oil

1 medium onion, diced

3 cloves garlic, minced

8 oz mushrooms, sliced (cremini or button)

3 cups fresh spinach

1/2 cup heavy cream or coconut cream

1/2 cup grated Parmesan cheese (or nutritional yeast for vegan option)

1 teaspoon dried thyme

Salt and pepper to taste

Optional: Fresh parsley for garnish

Cook the Orzo: In a medium saucepan, bring the vegetable broth to a boil. Add the orzo and cook according to package instructions until al dente, typically about 8-10 minutes. Drain and set aside.

    Sauté the Vegetables: In a large skillet, heat the olive oil over medium heat. Add the diced onion and sauté for 3-4 minutes until translucent. Then, add the minced garlic and sliced mushrooms, cooking for another 5-7 minutes until the mushrooms are tender and have released their moisture.

      Combine Spinach and Cream: Stir in the fresh spinach and cook until wilted, about 2 minutes. Lower the heat and pour in the heavy cream, mixing well to combine. Let it simmer for about 2-3 minutes, allowing the flavors to meld.

        Mix in Orzo: Add the cooked orzo to the skillet, followed by the grated Parmesan cheese, dried thyme, salt, and pepper. Stir thoroughly until everything is well combined and heated through.
