Ingredients

1 pound of large shrimp, peeled and deveined

1 cup of stone-ground grits

4 cups of water or chicken broth

4 tablespoons of unsalted butter

1 cup of heavy cream

1 cup of shredded sharp cheddar cheese

4 slices of bacon, chopped

1 medium onion, finely chopped

2 cloves of garlic, minced

1 teaspoon of Cajun seasoning

Salt and pepper to taste

Chopped green onions for garnish

Instructions

In a large saucepan, bring water or chicken broth to a boil. Add the grits, reduce heat to low, and simmer until thickened, about 20 minutes, stirring occasionally.

While the grits are cooking, heat a skillet over medium heat and cook the bacon until crisp. Remove and set aside, leaving the bacon fat in the pan.

In the same skillet, add onion and sauté until translucent, then add garlic and cook until fragrant.

Stir in the shrimp and Cajun seasoning, cooking until shrimp are pink and opaque, about 3-5 minutes. Add salt and pepper to taste.

Once the grits are done, stir in butter, heavy cream, and cheddar cheese until creamy and smooth.

Serve the creamy grits topped with the shrimp mixture and garnish with crispy bacon and green onions.
