Ingredients
  

1 cup orzo pasta

2 tablespoons olive oil

4 cloves garlic, minced

6 cups fresh spinach, roughly chopped

1 cup heavy cream

1/2 cup grated Parmesan cheese

1 teaspoon lemon zest

Juice of 1/2 lemon

Salt and pepper to taste

1/4 teaspoon red pepper flakes (optional)

Fresh basil or parsley, for garnish

Instructions
 

Cook the Orzo: In a large pot of salted boiling water, cook the orzo according to package instructions until al dente. Drain and set aside, reserving about 1/2 cup of pasta water.

    Sauté Garlic: In the same pot, heat the olive oil over medium heat. Add the minced garlic and sauté for about 1-2 minutes until fragrant but not browned.

      Add Spinach: Add the chopped spinach to the pot and cook, stirring frequently, until wilted, about 3-4 minutes.

        Make it Creamy: Lower the heat and pour in the heavy cream. Stir well to combine. Gradually add the Parmesan cheese, lemon zest, and lemon juice, and mix until the cheese has melted and the sauce is smooth.

          Combine: Add the cooked orzo to the creamy spinach mixture. If the sauce is too thick, add some of the reserved pasta water until you reach your desired consistency.

            Season: Season with salt, pepper, and red pepper flakes if using. Stir to combine all flavors.

              Serve: Serve warm, garnished with fresh basil or parsley.
