Ingredients

1 cup orzo pasta

4 cups vegetable broth (or chicken broth)

2 tablespoons olive oil

4 cloves garlic, minced

1 small onion, diced

1 cup heavy cream

1 cup grated Parmesan cheese

1 teaspoon Italian seasoning

Salt and pepper to taste

Fresh parsley, chopped (for garnish)

Instructions

In a medium saucepan, bring the vegetable broth to a simmer over medium heat.

In a separate large skillet, heat the olive oil over medium heat. Add the diced onion and sauté for about 3-4 minutes until translucent.

Add the minced garlic and sauté for an additional 1-2 minutes until fragrant, being careful not to burn it.

Stir in the orzo pasta and toast it lightly for about 2 minutes, stirring frequently.

Gradually pour in the simmering broth, one cup at a time, stirring continuously until the orzo absorbs most of the liquid before adding more. This process should take about 10-12 minutes until the orzo is cooked al dente.

Reduce the heat to low and stir in the heavy cream, grated Parmesan cheese, and Italian seasoning. Cook for 3-5 minutes until the sauce is creamy and thickened.

Season with salt and pepper to taste.

Remove from heat and let it sit for a minute. Serve hot, garnished with chopped parsley.
