1 lb boneless, skinless chicken breasts

1 cup wild rice blend

4 cups low-sodium chicken broth

1 cup diced carrots

1 cup diced celery

1 cup chopped onion

3 cloves garlic, minced

1 teaspoon dried thyme

1 teaspoon dried rosemary

½ teaspoon onion powder

½ teaspoon garlic powder

Salt and pepper to taste

1 cup heavy cream

2 tablespoons cornstarch (optional, for thickening)

Fresh parsley, chopped (for garnish)

Instructions
 

Prepare the Ingredients: Start by dicing the carrots, celery, and onion. Mince the garlic cloves and set them aside.

    Layer in the Crockpot: Place the chicken breasts at the bottom of the crockpot. Add the wild rice blend, diced carrots, celery, and onions on top of the chicken.

      Add Seasonings: Sprinkle in the minced garlic, dried thyme, dried rosemary, onion powder, garlic powder, salt, and pepper. Pour the chicken broth over all the ingredients.

        Cook: Cover and cook on low for 6-7 hours or on high for 3-4 hours until the chicken is cooked through and the rice is tender.

          Shred the Chicken: Once cooked, remove the chicken breasts from the crockpot and shred them using two forks. Return the shredded chicken to the soup.

            Make it Creamy: Stir in the heavy cream and let the soup cook on low for an additional 15-30 minutes until heated through.

              Thicken if Desired: If you prefer a thicker soup, mix the cornstarch with a little water to create a slurry, then add it to the soup and stir well.
