Creamy Chipotle Chicken Corn Soup With Crispy Bacon

Ingredients
  

1 lb boneless, skinless chicken breasts

4 slices of bacon

1 medium onion, diced

2 cloves garlic, minced

2 cups corn (fresh or frozen)

2 cups chicken broth

1 cup heavy cream

1-2 chipotle peppers in adobo sauce, minced

1 tsp ground cumin

Salt and pepper to taste

Fresh cilantro for garnish

Lime wedges for serving

Instructions
 

In a large pot, cook the bacon over medium heat until crispy. Remove and crumble onto paper towels, leaving the bacon fat in the pot.

    In the same pot, add diced onions and minced garlic to the bacon fat. Sauté until translucent.

      Add the chicken breasts and cook for about 5-7 minutes on each side until browned. Remove chicken and set aside.

        In the pot, add corn, chicken broth, chipotle peppers, cumin, salt, and pepper. Bring to a boil.

          Reduce heat and return the chicken to the pot. Cover and simmer for 15-20 minutes until the chicken is cooked through.

            Remove chicken, shred it, and return it to the pot.

              Stir in the heavy cream and heat through. Adjust seasoning as needed.

                Serve hot, garnished with crispy bacon, fresh cilantro, and lime wedges.
