Ingredients
  

1 lb chicken sausage, sliced

1 cup orzo pasta

4 cups low-sodium chicken broth

1 cup heavy cream

1 medium onion, diced

3 cloves garlic, minced

2 cups fresh spinach

1/2 cup sun-dried tomatoes, chopped

1/4 cup grated Parmesan cheese

1 tsp Italian seasoning

Salt and pepper to taste

2 tbsp olive oil

Fresh basil for garnish (optional)

Instructions
 

Heat the Oil: In a large skillet, heat 2 tablespoons of olive oil over medium heat.

    Cook the Sausage: Add the sliced chicken sausage to the skillet and cook until browned, about 5-7 minutes. Remove the sausage and set aside.

      Sauté the Vegetables: In the same skillet, add the diced onion and cook until translucent, about 3-4 minutes. Stir in the minced garlic and cook for another minute until fragrant.

        Add Orzo: Pour in the orzo and stir to coat it with the oil and vegetables. Let it toast for a minute.

          Pour in Broth: Add the chicken broth and bring the mixture to a boil. Reduce heat to low, cover, and simmer for 10-12 minutes or until the orzo is tender and has absorbed most of the liquid.

            Make it Creamy: Once the orzo is cooked, stir in the heavy cream, sun-dried tomatoes, spinach, and the Italian seasoning. Cook until the spinach is wilted.
