1 tablespoon olive oil

1 pound boneless, skinless chicken thighs, diced

1 small onion, chopped

2 cloves garlic, minced

1 cup carrots, diced

1 cup celery, diced

1 cup frozen peas

1 teaspoon dried thyme

1 teaspoon dried rosemary

4 cups chicken broth

2 cups wide egg noodles

1 cup heavy cream

Salt and pepper to taste

Fresh parsley for garnish

In a large skillet, heat olive oil over medium heat. Add the diced chicken and season with salt and pepper. Cook until browned and cooked through, about 5-7 minutes.

    Add the chopped onion, garlic, carrots, and celery to the skillet. Sauté for 4-5 minutes until the vegetables are tender.

      Stir in the dried thyme and rosemary, allowing the flavors to meld for another minute.

        Pour in the chicken broth and bring to a boil. Stir in the egg noodles and cook according to package instructions, typically about 8-10 minutes, or until the noodles are tender.

          Reduce the heat to low and pour in the heavy cream. Stir well to combine and heat through, about 2-3 minutes.

            Mix in the frozen peas and cook for an additional 2 minutes until they are heated.
