Ingredients
  

2 cups shredded cooked chicken

1 can (10 oz) enchilada sauce

1 can (10 oz) cream of chicken soup

1 cup sour cream

2 cups shredded cheese (cheddar or Mexican blend)

10 small corn tortillas

1 cup chopped onions

1 cup chopped bell peppers (any color)

1 teaspoon garlic powder

1 teaspoon cumin

1/2 teaspoon salt

1/2 teaspoon pepper

Fresh cilantro (optional, for garnish)

Instructions
 

Preheat your oven to 350°F (175°C).

    In a large bowl, mix the shredded chicken, enchilada sauce, cream of chicken soup, and sour cream until smooth.

      Stir in half of the cheese, garlic powder, cumin, salt, and pepper.

        In a greased 9x13 inch casserole dish, spread a layer of the chicken mixture at the bottom.

          Cut corn tortillas into halves or quarters and layer them over the chicken mixture.

            Sprinkle chopped onions and bell peppers over the tortillas.

              Repeat the layers, finishing with the remaining chicken mixture on top.

                Sprinkle the rest of the cheese evenly over the top.

                  Cover the dish with aluminum foil and bake for 30 minutes.

                    Remove the foil and bake for an additional 10-15 minutes, or until the cheese is bubbly and golden.

                      Let it cool for a few minutes, then garnish with fresh cilantro if desired before serving.
