12 oz penne pasta

1 lb smoked sausage, sliced

1 cup heavy cream

1 cup chicken broth

1 medium onion, diced

3 cloves garlic, minced

1 bell pepper, diced (any color)

2 cups spinach, fresh

2 tablespoons Cajun seasoning

1 tablespoon olive oil

Salt and pepper to taste

Grated Parmesan cheese for serving

Fresh parsley for garnish

Instructions
 

Cook the Pasta: Bring a large pot of salted water to a boil and cook the penne pasta according to package instructions until al dente. Drain and set aside.

    Sauté Sausage: In a large skillet, heat olive oil over medium heat. Add the sliced smoked sausage and cook until browned, about 5-7 minutes.

      Add Vegetables: Stir in the diced onion, bell pepper, and minced garlic. Sauté until the vegetables are soft, about 3-4 minutes.

        Create Sauce: Pour in the chicken broth and heavy cream. Stir in the Cajun seasoning, and bring to a gentle simmer.
