Creamy Cajun Sausage Orzo Skillet Recipe

Ingredients
  

1 tablespoon olive oil

1 pound smoked sausage, sliced (such as Andouille or kielbasa)

1 onion, diced

3 cloves garlic, minced

1 bell pepper, diced (red or green)

1 cup cherry tomatoes, halved

1 teaspoon Cajun seasoning (or more to taste)

1/2 teaspoon smoked paprika

1 1/2 cups orzo pasta

4 cups chicken broth

1 cup heavy cream

1 cup shredded cheddar cheese

Salt and pepper, to taste

Fresh parsley, chopped (for garnish)

Instructions
 

Heat the Oil: In a large skillet, heat the olive oil over medium heat.

    Sauté the Sausage: Add the sliced smoked sausage and cook until browned, about 5-7 minutes. Remove the sausage from the skillet and set aside.

      Cook the Vegetables: In the same skillet, add the diced onion, garlic, and bell pepper. Sauté until the vegetables are softened, about 3-4 minutes.

        Add Tomatoes and Spices: Stir in the cherry tomatoes, Cajun seasoning, and smoked paprika. Cook for another 2 minutes until the tomatoes soften.

          Add Orzo and Broth: Add the orzo pasta to the skillet, stirring to combine. Pour in the chicken broth and bring the mixture to a boil. Reduce the heat to low, cover the skillet, and simmer for 10-12 minutes, or until the orzo is tender and has absorbed most of the liquid.

            Make it Creamy: Once the orzo is cooked, stir in the heavy cream and shredded cheddar cheese. Mix well until the cheese is melted and the sauce is creamy. If the mixture is too thick, add a bit more chicken broth or cream to reach your desired consistency.

              Reintroduce Sausage: Add the previously cooked sausage back to the skillet, stirring to combine. Season with salt and pepper to taste.

                Serve: Remove from heat, garnish with fresh parsley, and serve warm.
