Ingredients
  

4 boneless, skinless chicken thighs

1 cup orzo pasta

1 cup chicken broth

1 cup heavy cream

1 cup shredded mozzarella cheese

1 cup fresh spinach, roughly chopped

2 cloves garlic, minced

1 small onion, finely chopped

1 teaspoon Italian seasoning

1/2 teaspoon red pepper flakes (optional)

Salt and pepper to taste

2 tablespoons olive oil

Fresh parsley, for garnish

Instructions
 

Preheat your oven to 375°F (190°C).

    In a large oven-safe skillet, heat the olive oil over medium heat. Season the chicken thighs with salt, pepper, and Italian seasoning. Add them to the skillet and brown on both sides for about 4-5 minutes. Remove and set aside.

      In the same skillet, add chopped onion and minced garlic. Sauté for 2-3 minutes until the onion becomes translucent.

        Stir in the orzo pasta and cook for another minute, allowing it to toast slightly.

          Pour in the chicken broth, heavy cream, and red pepper flakes (if using). Mix well, scraping any brown bits from the bottom of the skillet.

            Stir in the chopped spinach until wilted, then place the browned chicken thighs back on top of the orzo mixture.

              Cover the skillet with a lid or aluminum foil and transfer it to the preheated oven. Bake for 25-30 minutes, or until the chicken is cooked through and the orzo is tender.

                Remove from the oven and sprinkle the shredded mozzarella cheese on top. Bake uncovered for an additional 5 minutes, or until the cheese is melted and bubbly.

                  Let it cool for a few minutes before garnishing with fresh parsley. Serve warm.
