Ingredients
  

2 cups cooked rice (white or brown)

1 lb chicken breast, cooked and shredded

1 can (10.5 oz) cream of chicken soup

1 cup sour cream

1 cup shredded cheddar cheese

1 cup frozen mixed vegetables (peas, carrots, corn)

1 teaspoon garlic powder

1 teaspoon onion powder

1/2 teaspoon salt

1/4 teaspoon black pepper

1 tablespoon olive oil

1/2 cup breadcrumbs (optional, for topping)

Fresh parsley for garnish (optional)

Instructions
 

Preheat the Oven: Begin by preheating your oven to 350°F (175°C).

    Sauté Vegetables: In a large skillet, heat the olive oil over medium heat. Add the frozen mixed vegetables and sauté until they are heated through, about 5-7 minutes.

      Mix the Base: In a large mixing bowl, combine the cooked rice, shredded chicken, cream of chicken soup, sour cream, 1/2 cup of shredded cheddar cheese, garlic powder, onion powder, salt, and black pepper. Stir until well combined.

        Combine with Vegetables: Add the sautéed vegetables to the rice mixture and stir gently until everything is evenly incorporated.

          Transfer to Casserole Dish: Pour the mixture into a greased 9x13 inch casserole dish. Spread it out evenly.

            Top with Cheese and Breadcrumbs: Sprinkle the remaining 1/2 cup of shredded cheddar cheese on top of the mixture. If desired, sprinkle breadcrumbs over the cheese for added texture.

              Bake: Place the casserole in the preheated oven and bake for about 30-35 minutes, or until the top is golden and the casserole is bubbly.
