2 tablespoons olive oil

1 medium onion, diced

3 cloves garlic, minced

1 pound Italian sausage (spicy or mild, your choice), casings removed

4 cups chicken broth

1 (15-ounce) can diced tomatoes, undrained

1 teaspoon dried basil

1 teaspoon dried oregano

1/2 teaspoon crushed red pepper flakes (optional for heat)

8 ounces lasagna noodles, broken into pieces

1 cup heavy cream

1 cup grated Parmesan cheese, plus extra for serving

2 cups fresh spinach, roughly chopped

Salt and pepper, to taste

Fresh basil, for garnish

Instructions
 

In a large pot or Dutch oven, heat the olive oil over medium heat. Add the diced onion and sauté for about 3-4 minutes, until translucent.

    Stir in the minced garlic and cook for an additional 1-2 minutes, until fragrant.

      Add the Italian sausage to the pot, breaking it up with a wooden spoon. Cook until browned and cooked through, about 5-7 minutes. Drain any excess fat if necessary.

        Pour in the chicken broth and add the diced tomatoes, basil, oregano, and crushed red pepper flakes, if using. Bring the mixture to a simmer.

          Add the broken lasagna noodles to the pot. Cook for about 10-12 minutes, or until the noodles are tender, stirring occasionally.

            Once the noodles are cooked, reduce the heat to low and stir in the heavy cream and Parmesan cheese until fully combined and creamy.

              Gently fold in the fresh spinach, allowing it to wilt in the warm soup. Season with salt and pepper to taste.

                Serve the soup hot, garnished with additional Parmesan cheese and fresh basil leaves for an extra touch.
