Ingredients

8 oz linguine pasta

1 lb boneless, skinless chicken breasts, cut into bite-sized pieces

4 tablespoons cowboy butter (or regular butter infused with herbs and spices)

4 cloves garlic, minced

1 teaspoon smoked paprika

1 teaspoon onion powder

1 teaspoon Italian seasoning

Salt and pepper, to taste

1 cup cherry tomatoes, halved

1 cup heavy cream

1 cup chicken broth

¾ cup grated Parmesan cheese

2 tablespoons fresh parsley, chopped (for garnish)

Optional: crushed red pepper flakes (for extra heat)

Instructions

Cook the Pasta: Bring a large pot of salted water to a boil. Add linguine and cook according to package instructions until al dente. Reserve ½ cup of pasta water, then drain and set aside.

Sear the Chicken: In a large skillet over medium-high heat, melt 2 tablespoons of cowboy butter. Add the diced chicken and season with smoked paprika, onion powder, Italian seasoning, salt, and pepper. Sear until the chicken is browned and cooked through, about 5-7 minutes. Remove the chicken from the skillet and set aside.

Sauté the Garlic: In the same skillet, add the remaining 2 tablespoons of cowboy butter and reduce the heat to medium. Add minced garlic and sauté until fragrant, about 1 minute.

Make the Sauce: To the skillet, add cherry tomatoes and cook until they begin to soften, about 3 minutes. Pour in the heavy cream and chicken broth, stirring to combine. Let it simmer for about 5 minutes.

Combine Everything: Add the cooked linguine and seared chicken back into the skillet. Stir to coat everything evenly in the sauce. If the sauce is too thick, add a little reserved pasta water until you reach the desired consistency.

Finishing Touches: Stir in grated Parmesan cheese and mix until melted and creamy. Adjust seasoning with salt, pepper, and crushed red pepper flakes if desired.

Serve: Plate the Cowboy Butter Chicken Linguine and garnish with fresh parsley. Enjoy!
