Ingredients
  

1 cup all-purpose flour

2 tablespoons sugar

1 tablespoon baking powder

1/2 teaspoon salt

1 cup milk

1 large egg

2 tablespoons unsalted butter, melted

1 teaspoon vanilla extract

Cooking spray or extra butter for the pan

Instructions
 

In a large bowl, whisk together the flour, sugar, baking powder, and salt until well combined.

    In another bowl, mix the milk, egg, melted butter, and vanilla extract until smooth.

      Pour the wet ingredients into the dry ingredients and gently stir until just combined. Avoid over-mixing; a few lumps are okay!

        Heat a non-stick skillet or griddle over medium heat and lightly grease with cooking spray or butter.

          Pour about 1/4 cup of pancake batter onto the skillet for each pancake. Cook until bubbles form on the surface and the edges look set, approximately 2-3 minutes.

            Flip the pancakes and cook for another 1-2 minutes on the other side until golden brown.

              Repeat with the remaining batter, keeping cooked pancakes warm in a low oven if desired.

                Serve hot with butter and syrup, or your favorite toppings.
