Ingredients
  

1 ½ cups all-purpose flour

1 teaspoon baking powder

½ teaspoon baking soda

¼ teaspoon salt

½ cup unsweetened cocoa powder

1 cup granulated sugar

½ cup brown sugar

¾ cup unsalted butter, softened

3 large eggs

1 teaspoon vanilla extract

1 cup buttermilk

1 cup crushed chocolate sandwich cookies (like Oreos)

1 cup heavy cream

½ cup powdered sugar

Additional crushed cookies for garnish

Instructions
 

Preheat your oven to 350°F (175°C) and grease two 9-inch round cake pans.

    In a medium bowl, whisk together the flour, baking powder, baking soda, salt, and cocoa powder.

      In a large mixing bowl, cream together the granulated sugar, brown sugar, and softened butter until light and fluffy.

        Add the eggs one at a time, mixing well after each addition. Stir in the vanilla extract.

          Gradually add the dry ingredients to the wet mixture, alternating with the buttermilk, beginning and ending with the dry ingredients.

            Fold in the crushed chocolate sandwich cookies until well combined.

              Divide the batter evenly between the prepared cake pans and smooth the tops.

                Bake for 25-30 minutes, or until a toothpick inserted in the center comes out clean. Let the cakes cool in the pans for 10 minutes before transferring them to wire racks to cool completely.

                  For the frosting, whip the heavy cream until soft peaks form, then gradually add the powdered sugar and continue whipping until stiff peaks form.

                    Place one cake layer on a serving plate, spread a layer of whipped cream on top, and sprinkle with crushed cookies.

                      Place the second cake layer on top and frost the entire cake with the remaining whipped cream.

                        Decorate the top with additional crushed cookies. Chill for at least 30 minutes before serving.
