4 large yellow onions, thinly sliced

4 tablespoons unsalted butter

1 tablespoon olive oil

1 teaspoon sugar

4 cloves garlic, minced

1 teaspoon fresh thyme leaves (or ½ teaspoon dried thyme)

1 bay leaf

1 cup dry white wine (such as Sauvignon Blanc)

6 cups beef broth

1 tablespoon Worcestershire sauce

Salt and pepper to taste

8 slices of baguette or crusty bread

2 cups grated Gruyère cheese

1 cup grated Parmesan cheese

Fresh parsley, chopped (for garnish)

Caramelize the Onions: In a large heavy-bottomed pot, heat the butter and olive oil over medium heat. Add the sliced onions and stir well. Cook for about 15-20 minutes until they begin to soften. Sprinkle in the sugar to help caramelize the onions. Continue cooking, stirring occasionally, until the onions are golden brown and caramelized, about 30-40 minutes.

    Add Garlic and Herbs: Once the onions are caramelized, add the minced garlic and thyme. Cook for an additional 1-2 minutes until fragrant.

      Deglaze with Wine: Pour in the white wine, scraping the bottom of the pot to release any brown bits. Allow the wine to simmer until it reduces by half, about 5 minutes.

        Add Broth and Season: Stir in the beef broth and Worcestershire sauce. Add the bay leaf and season with salt and pepper. Bring the soup to a gentle boil, then reduce the heat to low and let it simmer uncovered for about 30 minutes.
