Ingredients
  

1 cup cooked quinoa

1 cup cherry tomatoes, halved

1 cucumber, diced

1 bell pepper, diced

1 avocado, sliced

1/4 cup red onion, finely chopped

1/4 cup fresh parsley, chopped

1 can (15 oz) chickpeas, rinsed and drained

1/4 cup olive oil

2 tablespoons lemon juice

Salt and pepper to taste

Instructions
 

In a large bowl, combine cooked quinoa, cherry tomatoes, cucumber, bell pepper, avocado, red onion, parsley, and chickpeas.

    In a small bowl, whisk together olive oil, lemon juice, salt, and pepper.

      Pour the dressing over the salad and gently toss to combine.

        Allow the salad to chill in the refrigerator for at least 30 minutes before serving to enhance flavors.
