Ingredients
  

2 cups all-purpose flour

1 cup grated fresh coconut (or desiccated coconut)

3/4 cup sugar

1/2 cup milk

1/4 cup unsalted butter, melted

1/4 teaspoon salt

1 teaspoon baking powder

1/2 teaspoon baking soda

1 teaspoon vanilla extract

1 egg

Instructions
 

Preheat the oven to 350°F (175°C) and grease a baking pan.

    In a large bowl, combine the flour, sugar, salt, baking powder, and baking soda.

      In another bowl, mix together the grated coconut, milk, melted butter, vanilla extract, and egg until well combined.

        Gradually add the wet ingredients to the dry ingredients, stirring until just combined. Avoid overmixing.

          Pour the batter into the prepared baking pan, smoothing the top with a spatula.

            Bake for 40-50 minutes, or until a toothpick inserted into the center comes out clean.

              Allow the coconut sweet bread to cool in the pan for 10 minutes, then transfer to a wire rack to cool completely.
