Ingredients
  

1 cup all-purpose flour

1 cup granulated sugar

1/2 cup unsweetened shredded coconut

1/2 cup butter, softened

2 large eggs

1/2 cup buttermilk

1 tsp baking powder

1 tsp vanilla extract

1/4 tsp salt

Fresh strawberries, for topping

Whipped cream, for serving

Instructions
 

Preheat your oven to 350°F (175°C) and grease a 9-inch round cake pan.

    In a large bowl, cream together the softened butter and sugar until light and fluffy.

      Add the eggs one at a time, mixing well after each addition.

        Stir in the buttermilk and vanilla extract.

          In another bowl, combine the flour, shredded coconut, baking powder, and salt.

            Gradually add the dry ingredients to the wet mixture, mixing until just combined.

              Pour the batter into the prepared cake pan and smooth the top with a spatula.

                Bake in the preheated oven for 25-30 minutes, or until a toothpick inserted into the center comes out clean.

                  Allow the cake to cool in the pan for 10 minutes, then transfer it to a wire rack to cool completely.

                    Once cooled, top the cake with fresh strawberries and a dollop of whipped cream before serving.
