2 ½ cups sweetened shredded coconut

2/3 cup sweetened condensed milk

1 teaspoon vanilla extract

1/4 teaspoon almond extract (optional)

2 large egg whites

Pinch of salt

1/2 cup semi-sweet chocolate chips

1 teaspoon coconut oil (for melting chocolate)

Pink or red sprinkles (for decoration, optional)

Instructions
 

Preheat the Oven: Preheat your oven to 325°F (165°C) and line a baking sheet with parchment paper.

    Mix the Coconut Base: In a large mixing bowl, combine the shredded coconut, sweetened condensed milk, vanilla extract, and almond extract (if using). Stir until well combined.

      Whip the Egg Whites: In a separate bowl, beat the egg whites and a pinch of salt using an electric mixer until stiff peaks form. This should take about 3-5 minutes.

        Fold in the Egg Whites: Carefully fold the whipped egg whites into the coconut mixture in three additions. Be gentle to retain the airiness of the egg whites.

          Shape the Macaroons: Use a cookie scoop or two spoons to drop heaping tablespoons of the mixture onto the prepared baking sheet, spacing them about 1 inch apart.
