Ingredients
  

2 ½ cups shredded coconut

2/3 cup granulated sugar

2 large egg whites

1 teaspoon vanilla extract

¼ teaspoon salt

½ cup dark chocolate (optional for dipping)

Instructions
 

Preheat your oven to 325°F (163°C) and line a baking sheet with parchment paper.

    In a large bowl, combine shredded coconut, granulated sugar, and salt. Mix well.

      In another bowl, beat the egg whites until soft peaks form. Gently fold the egg whites into the coconut mixture until just combined.

        Add the vanilla extract and fold in gently.

          Using a spoon or a cookie scoop, drop mounds of the mixture onto the prepared baking sheet, spacing them about 1 inch apart.

            Bake in the preheated oven for about 20-25 minutes or until the edges are golden brown.

              Allow the macarons to cool completely on the baking sheet.

                If desired, melt the dark chocolate and dip the bottoms of the macarons into it. Allow the chocolate to set before serving.
