Ingredients
  

1 lb boneless, skinless chicken thighs

1 can (13.5 oz) coconut milk

2 limes (zested and juiced)

3 cloves garlic, minced

1 tablespoon fresh ginger, grated

2 tablespoons soy sauce

1 tablespoon honey or agave syrup

1 teaspoon red pepper flakes (optional)

Salt and pepper to taste

Fresh cilantro for garnish

Instructions
 

In a bowl, whisk together the coconut milk, lime zest, lime juice, garlic, ginger, soy sauce, honey, and red pepper flakes.

    Season the chicken thighs with salt and pepper and place them in a shallow dish or zip-top bag. Pour the marinade over the chicken, ensuring it's well coated. Seal and refrigerate for at least 30 minutes, or overnight for deeper flavor.

      Preheat your grill or stovetop skillet over medium-high heat.

        Remove the chicken from the marinade and grill for 6-7 minutes on each side, or until the internal temperature reaches 165°F (75°C) and the chicken is cooked through.

          While the chicken is grilling, pour the leftover marinade into a small saucepan and bring to a boil. Simmer for about 5-7 minutes until it thickens slightly.

            Once the chicken is cooked, drizzle the thickened sauce over the top.

              Garnish with fresh cilantro before serving. Enjoy with rice or a fresh salad!
