1 lb chicken thighs (boneless, skinless)

1 cup coconut milk

1 cup shredded coconut (sweetened or unsweetened)

2 cloves garlic (minced)

1 tablespoon ginger (grated)

1 teaspoon salt

1 teaspoon black pepper

1 tablespoon lime juice

2 tablespoons coconut oil (for frying)

Fresh cilantro (for garnish)

Instructions
 

In a bowl, combine the coconut milk, minced garlic, grated ginger, salt, pepper, and lime juice. Mix well.

    Add the chicken thighs to the marinade, ensuring they're fully coated. Cover and refrigerate for at least 1 hour, preferably overnight for more flavor.

      Preheat your skillet over medium heat and add the coconut oil.

        Remove the chicken from the marinade, letting any excess liquid drip off. Dredge each piece in the shredded coconut.

          Place the coated chicken thighs into the hot skillet and cook for about 5-7 minutes on each side, or until golden brown and cooked through.

            Once cooked, remove the chicken from the skillet and let it rest for a few minutes.
