Ingredients
  

2 cups all-purpose flour

1 cup granulated sugar

1 tablespoon baking powder

½ teaspoon salt

½ cup unsalted butter, softened

1 cup coconut milk

3 large eggs

1 teaspoon vanilla extract

1 cup sweetened shredded coconut

Instructions
 

Preheat your oven to 350°F (175°C) and grease a 9-inch round cake pan.

    In a large mixing bowl, combine flour, sugar, baking powder, and salt.

      In another bowl, cream together the softened butter, then add the coconut milk, eggs, and vanilla extract, mixing well.

        Gradually blend the wet ingredients into the dry mixture until well combined.

          Fold in shredded coconut gently.

            Pour the batter into the prepared cake pan and spread evenly.

              Bake for 25-30 minutes or until a toothpick inserted into the center comes out clean.

                Let the cake cool in the pan for 10 minutes before transferring to a wire rack to cool completely.

                  Frost with your favorite coconut frosting or serve plain!
