2 lbs beef chuck, cut into 1-inch pieces

2 tablespoons olive oil

1 onion, chopped

3 cloves garlic, minced

4 carrots, sliced

3 potatoes, diced

2 cups beef broth

1 cup red wine (optional)

2 tablespoons tomato paste

1 teaspoon dried thyme

1 bay leaf

Salt and pepper to taste

Fresh parsley, chopped (for garnish)

Instructions
 

Heat the olive oil in a large pot over medium-high heat. Add the beef chunks and sear until browned on all sides, about 5-7 minutes. Remove beef and set aside.

    In the same pot, add chopped onion and cook until softened, about 3 minutes. Stir in minced garlic and cook for an additional minute.

      Add sliced carrots and diced potatoes, stirring to combine with the onions and garlic.

        Return the beef to the pot, then pour in the beef broth and red wine (if using). Stir in the tomato paste, thyme, bay leaf, salt, and pepper.

          Bring the mixture to a boil, then reduce the heat to low. Cover and simmer for 1.5 to 2 hours, or until the beef is tender.

            Remove the bay leaf before serving and garnish with fresh parsley.
