Ingredients
  

2 ½ cups all-purpose flour

1 teaspoon salt

1 tablespoon sugar

1 cup unsalted butter, chilled and cut into cubes

6 to 8 tablespoons ice water

6 to 8 medium apples, peeled, cored, and sliced

¾ cup sugar (adjust according to apple tartness)

2 teaspoons ground cinnamon

1 tablespoon lemon juice

2 tablespoons all-purpose flour (for filling)

1 egg (for egg wash)

Instructions
 

In a large bowl, mix the flour, salt, and sugar. Add chilled butter and mix until crumbly.

    Stir in ice water, one tablespoon at a time, until the dough comes together.

      Divide dough in half, shape into disks, and refrigerate for at least 1 hour.

        Preheat the oven to 425°F (220°C).

          In another bowl, combine apple slices, sugar, cinnamon, lemon juice, and flour. Toss to coat.

            Roll out one dough disk to fit a 9-inch pie pan. Place it in the pan.

              Fill with the apple mixture, then roll out the second disk to cover the pie. Cut slits for steam to escape.

                Trim and crimp the edges, then brush the top with beaten egg.

                  Bake for 15 minutes at 425°F, then reduce heat to 350°F (175°C) and bake for an additional 35-45 minutes, until apples are tender.

                    Allow to cool before serving. Enjoy your delicious pie!
