For the crust:

1 cup graham cracker crumbs

1/4 cup granulated sugar

1/2 cup unsalted butter, melted

For the cheesecake filling:

16 oz cream cheese, softened

1 cup granulated sugar

1 teaspoon vanilla extract

3 large eggs

1 teaspoon ground cinnamon

1 cup sour cream

For the honeybun swirl:

1/2 cup brown sugar

2 tablespoons ground cinnamon

1 cup cinnamon roll dough (store-bought or homemade), diced

For the topping:

1 cup powdered sugar

2 tablespoons milk

1/2 teaspoon vanilla extract

Instructions
 

Prepare the crust: In a medium bowl, combine the graham cracker crumbs, sugar, and melted butter. Mix until well combined. Press the mixture into the bottom of a 9-inch springform pan to form an even layer. Freeze while you prepare the filling.

    Preheat the oven: Preheat your oven to 325°F (163°C).

      Make the cheesecake filling: In a large mixing bowl, beat the softened cream cheese with an electric mixer until smooth and creamy. Gradually add the granulated sugar and continue to mix until well combined.

        Add remaining ingredients: Mix in the vanilla extract, eggs (one at a time), ground cinnamon, and sour cream. Beat until just combined, being careful not to overmix.

          Prepare the honeybun swirl: In a small bowl, mix together the brown sugar and ground cinnamon. Fold in the diced cinnamon roll dough, ensuring it's evenly coated in the sugar mixture.

            Assemble the cheesecake: Pour half of the cheesecake filling onto the crust. Then, sprinkle half of the honeybun mixture over the filling. Pour the remaining cheesecake filling on top, smoothing it out. Finally, swirl the remaining honeybun mixture into the top layer with a knife or toothpick for a marbled effect.

              Bake the cheesecake: Place the springform pan on a baking sheet and bake for about 55-70 minutes, or until the edges are set, and the center slightly jiggles. Turn off the oven and leave the cheesecake inside with the door ajar for 1 hour to cool gradually.

                Chill: Remove the cheesecake from the oven and let it cool to room temperature, then refrigerate for at least 4 hours or overnight for best results.

                  Prepare the topping: In a small bowl, whisk together the powdered sugar, milk, and vanilla extract until smooth. Drizzle the glaze over the chilled cheesecake just before serving.
