Ingredients

For the Cake:

2 cups all-purpose flour

1 ½ teaspoons baking powder

1 teaspoon baking soda

½ teaspoon salt

1 teaspoon ground cinnamon

½ cup unsalted butter, softened

1 cup granulated sugar

2 large eggs

1 teaspoon vanilla extract

1 cup buttermilk

2 cups finely chopped apples (about 2 medium apples, Granny Smith or Honeycrisp)

For the Crumb Topping:

¾ cup all-purpose flour

⅓ cup brown sugar, packed

1 teaspoon ground cinnamon

¼ cup unsalted butter, melted

½ cup oats (old-fashioned or quick)

For the Glaze:

1 cup powdered sugar

2 tablespoons milk

½ teaspoon vanilla extract

Instructions

Preheat the Oven: Preheat your oven to 350°F (175°C). Grease a 9x13-inch baking pan or line it with parchment paper for easy removal.

    Make the Cake Batter:

      - In a medium bowl, whisk together the flour, baking powder, baking soda, salt, and ground cinnamon. Set aside.

        - In a large mixing bowl, beat the softened butter and granulated sugar together until light and fluffy, about 3-4 minutes.

          - Add the eggs one at a time, mixing well after each addition. Stir in the vanilla extract.

            - Alternate adding the dry ingredients and buttermilk, starting and ending with the flour mixture. Mix until just combined. Do not overmix.

              - Gently fold in the chopped apples.

                Prepare the Crumb Topping:

                  - In a separate bowl, combine the flour, brown sugar, ground cinnamon, and oats. Pour in the melted butter and mix until crumbly.

                    Assemble the Cake:

                      - Pour the cake batter into the prepared baking pan and spread it evenly. Sprinkle the crumb topping over the batter, making sure to cover it well.

                        Bake the Cake:

                          - Bake for 30-35 minutes, or until a toothpick inserted into the center comes out clean. The top should be golden brown.

                            Prepare the Glaze:

                              - While the cake is baking, mix the powdered sugar, milk, and vanilla extract in a small bowl until smooth. Adjust the consistency with more milk or powdered sugar if necessary.

                                Cool and Serve:

                                  - Once baked, remove the cake from the oven and let it cool in the pan for about 10 minutes. Drizzle the glaze over the warm cake before slicing and serving.
