Ingredients
  

1 pre-baked pie crust (store-bought or homemade)

1 cup heavy whipping cream

1/2 cup granulated sugar

2 tbsp unsweetened cocoa powder

2 tsp vanilla extract

3 large egg yolks

1/4 cup cornstarch

2 cups whole milk

1/2 cup semi-sweet chocolate chips

Whipped cream (for topping)

Chocolate shavings (for garnish)

Instructions
 

In a medium bowl, whisk together the egg yolks, cornstarch, and 1/4 cup of sugar until smooth.

    In a saucepan, combine the remaining 1/4 cup of sugar, cocoa powder, and whole milk. Heat over medium heat, stirring frequently, until it begins to simmer.

      Gradually whisk some of the hot milk mixture into the egg yolk mixture to temper the eggs. Then, slowly pour the egg mixture back into the saucepan.

        Continue cooking over medium heat, stirring constantly until the mixture thickens, about 5-7 minutes.

          Remove from heat and stir in the chocolate chips and vanilla extract until smooth. Allow the filling to cool slightly.

            Pour the chocolate filling into the pre-baked pie crust and smooth it out.

              Refrigerate for at least 4 hours, or until set.

                Before serving, whip the heavy cream with sugar until soft peaks form and spread over the pie.

                  Garnish with chocolate shavings and serve chilled.
