Ingredients
  

1 pound shrimp, peeled and deveined

2 tablespoons olive oil

2 tablespoons chipotle sauce (or chipotle in adobo)

Zest and juice of 1 lime

2 cloves garlic, minced

1 teaspoon cumin

1 teaspoon paprika

Salt and pepper to taste

1 cup cooked brown rice or quinoa

1 cup corn (fresh or frozen)

1 cup black beans, rinsed and drained

1 avocado, diced

1 cup cherry tomatoes, halved

Fresh cilantro, for garnish

Lime wedges, for serving

Instructions
 

In a large bowl, combine the shrimp, olive oil, chipotle sauce, lime zest, lime juice, garlic, cumin, paprika, salt, and pepper. Mix well and let marinate for at least 15 minutes.

    Heat a grill or skillet over medium-high heat. Add the marinated shrimp and cook for 2-3 minutes on each side until they are opaque and cooked through.

      In serving bowls, layer cooked brown rice or quinoa, corn, black beans, and the grilled shrimp.
