1 cup brown rice

1 can black beans (drained and rinsed)

1 cup corn (frozen or canned)

1 cup diced tomatoes (fresh or canned)

1/2 red onion (finely chopped)

1 bell pepper (diced)

1 avocado (sliced)

1 cup shredded lettuce

1 cup shredded cheddar cheese

1/4 cup fresh cilantro (chopped)

1 lime (cut into wedges)

Salt and pepper to taste

Optional: Sour cream and salsa for topping

Instructions
 

Cook the rice: Prepare brown rice according to package instructions. Set aside.

    Prepare the beans: In a small pot, heat black beans over medium heat until warmed through. Season with salt and pepper.
