Chili Lime Chicken Bowls Recipe

Ingredients
  

2 boneless, skinless chicken breasts

1 tablespoon olive oil

2 teaspoons chili powder

1 teaspoon cumin

1 teaspoon garlic powder

1 lime (zested and juiced)

Salt and pepper to taste

1 cup cooked rice (white or brown)

1 cup black beans (rinsed and drained)

1 cup corn (fresh or frozen)

1 avocado, sliced

1 cup cherry tomatoes, halved

Fresh cilantro, chopped (for garnish)

Instructions
 

In a small bowl, mix together olive oil, chili powder, cumin, garlic powder, lime zest, lime juice, salt, and pepper.

    Place the chicken breasts in a zip-top bag or a dish and pour the marinade over the chicken. Seal and marinate for at least 30 minutes (or overnight for best flavor).

      Preheat a grill or skillet over medium heat. Cook the chicken for about 6-7 minutes on each side, or until fully cooked and no longer pink in the center. Remove from heat and let rest for a few minutes before slicing.

        In your serving bowls, layer cooked rice, black beans, corn, sliced avocado, and cherry tomatoes.

          Add the sliced chicken on top and garnish with fresh cilantro.

            Drizzle with extra lime juice if desired and serve warm.
