Chile Rellenos, which translates to "stuffed peppers" in Spanish, are a beloved dish in Mexican cuisine. Traditionally, they consist of roasted and peeled poblano peppers stuffed with cheese or meat, then battered and fried. The flavor profile is rich and savory, with a hint of smokiness from the roasted peppers. However, as culinary boundaries blur and innovation takes center stage, the concept of stuffing these delicious ingredients into wonton wrappers adds an exciting element that elevates the original dish.

Ingredients

1 cup shredded cheese (cheddar or Monterey Jack)

2-3 fresh Poblano peppers

1 package of wonton wrappers

1 tablespoon olive oil

¼ cup diced onions

1/4 teaspoon garlic powder

1/4 teaspoon cumin

Salt and pepper to taste

Oil for frying

For the Jalapeño Soy Sauce:

1/4 cup soy sauce

1-2 fresh jalapeños, finely chopped

1 teaspoon honey

1 teaspoon sesame oil

1 tablespoon rice vinegar

1 clove garlic, minced

Instructions

Prep the Peppers: Roast the Poblano peppers over an open flame or in the oven until the skin is blistered. Place them in a bag for 10 minutes, then peel and remove seeds. Chop the peppers finely.

Sauté the Filling: In a skillet, heat olive oil over medium heat. Add diced onions and sauté until translucent. Stir in the chopped Poblano peppers, garlic powder, cumin, salt, and pepper. Cook for another 2-3 minutes. Remove from heat and mix in the cheese until melted and combined.

Fill the Wontons: Place a wonton wrapper on a clean surface. Spoon about a teaspoon of the pepper-cheese mixture into the center. Moisten the edges of the wrapper with water and fold it over to form a triangle, pressing out the air. Seal tightly.

Fry the Wontons: Heat oil in a deep skillet over medium-high heat. Fry the wontons in batches until golden brown and crispy, about 2-3 minutes per side. Remove and drain on paper towels.

Make Jalapeño Soy Sauce: In a small bowl, mix soy sauce, chopped jalapeños, honey, sesame oil, rice vinegar, and minced garlic. Adjust the heat level according to your taste by adding more or fewer jalapeños.

Serve: Arrange the wontons on a plate and serve with the jalapeño soy sauce for dipping.
