2 lbs boneless chicken thighs, cut into bite-sized pieces

4 tablespoons vegetable oil

6 cloves garlic, minced

1-inch piece ginger, grated

1 cup low-sodium chicken broth

4 tablespoons soy sauce

2 tablespoons oyster sauce

1 tablespoon hoisin sauce

1 tablespoon cornstarch mixed with 2 tablespoons water (slurry)

1 tablespoon granulated sugar

1 teaspoon sesame oil

1 teaspoon crushed red pepper flakes (optional)

3 green onions, chopped (for garnish)

Cooked white rice, for serving

Instructions
 

Marinate the Chicken: In a bowl, combine the chicken pieces with 2 tablespoons of soy sauce, 1 tablespoon of oyster sauce, and a sprinkle of black pepper. Let it marinate for at least 20 minutes to enhance the flavor.

    Prepare the Sauce: In a separate bowl, whisk together the chicken broth, remaining soy sauce, oyster sauce, hoisin sauce, sugar, sesame oil, and crushed red pepper flakes (if using).

      Heat the Oil: In a large skillet or wok, heat the vegetable oil over medium-high heat. Once hot, add the marinated chicken and stir-fry until golden brown and cooked through, about 5-7 minutes. Remove the chicken from the pan and set aside.

        Cook the Aromatics: In the same pan, add a little more oil if needed. Add the minced garlic and grated ginger, stirring quickly to avoid burning, about 30 seconds.

          Add the Sauce: Pour the prepared sauce into the pan and bring to a gentle simmer. Stir in the cornstarch slurry to thicken the sauce, cooking for about 3-4 minutes until it becomes glossy.

            Combine Chicken and Sauce: Return the cooked chicken to the pan, tossing it in the sauce until well-coated. Cook for an additional 2 minutes to heat through.
