Ingredients
  

4 large bell peppers (any color)

1 lb ground chicken

1 cup cooked rice

1 cup black beans, drained and rinsed

1 cup corn (fresh, frozen, or canned)

1 cup diced tomatoes (canned or fresh)

1 medium onion, chopped

2 cloves garlic, minced

1 tsp cumin

1 tsp chili powder

Salt and pepper to taste

1 cup shredded cheese (cheddar or Mexican blend)

Fresh cilantro for garnish (optional)

Instructions
 

Preheat the oven to 375°F (190°C).

    Cut the tops off the bell peppers and remove the seeds and membranes. Set aside.

      In a large skillet over medium heat, sauté the chopped onion and minced garlic until translucent.

        Add the ground chicken to the skillet and cook until browned and fully cooked through.

          Stir in the cooked rice, black beans, corn, diced tomatoes, cumin, chili powder, salt, and pepper. Mix well and cook for an additional 5 minutes.

            Remove the skillet from heat and stir in half of the shredded cheese.

              Spoon the chicken mixture into the prepared bell peppers, packing tightly.

                Place the stuffed peppers upright in a baking dish and sprinkle the remaining cheese on top.

                  Add a splash of water or broth to the bottom of the dish (to add moisture) and cover with foil.

                    Bake in the preheated oven for 25-30 minutes or until the peppers are tender.

                      Remove from the oven, let cool slightly, then garnish with fresh cilantro if desired.
