Ingredients
  

1.5 lbs chicken breast, cubed

1 cup coconut milk

1 ripe mango, peeled and diced

1 cup packed fresh cilantro

1-2 jalapeños, de-seeded and chopped

1/2 cup green onions, sliced

3 cloves garlic, minced

1 tsp ginger, minced

2 tbsp lime juice

1 tbsp olive oil

Salt and pepper to taste

Instructions
 

In a blender, combine the coconut milk, mango, cilantro, jalapeños, garlic, ginger, and lime juice. Blend until smooth.

    Heat olive oil in a large pan over medium heat. Season the chicken with salt and pepper, then add it to the pan.

      Cook the chicken until browned, about 7-10 minutes.

        Pour the mango verde sauce over the chicken. Reduce heat to low and let it simmer for about 15-20 minutes, until the chicken is cooked through.

          Stir in the green onions just before serving. Adjust seasoning as necessary.

            Serve warm with rice or tortillas, and enjoy your tropical flavors!
