Ingredients

1 box of white cake mix

1 cup of cherry limeade (plus extra for poking)

1/3 cup vegetable oil

3 large eggs

1 small box of cherry gelatin

1 cup boiling water

1 cup heavy whipping cream

1 cup powdered sugar

1 teaspoon vanilla extract

Maraschino cherries (for topping)

Lime zest (for garnish)

Instructions

Preheat the oven to 350°F (175°C). Grease and flour a 9x13 inch baking pan.

In a large mixing bowl, combine the cake mix, 1 cup of cherry limeade, vegetable oil, and eggs. Mix until smooth.

Pour the batter into the prepared baking pan and bake for 25-30 minutes, or until a toothpick inserted comes out clean.

Once baked, remove the cake from the oven and let it cool for 10 minutes. Poke holes all over the top using a fork.

In a separate bowl, dissolve the cherry gelatin in 1 cup of boiling water. Pour the gelatin mixture over the cake, making sure it seeps into the holes.

Allow the cake to cool completely in the pan, then refrigerate for at least 2 hours.

In a medium bowl, beat together the heavy whipping cream, powdered sugar, and vanilla extract until soft peaks form.

Spread the whipped cream over the chilled cake. Top with maraschino cherries and lime zest for garnish.

Slice, serve, and enjoy your delightful Cherry Limeade Poke Cake!
