2 cups fresh or frozen cherries, pitted

1 cup granulated sugar

1 tablespoon cornstarch

1 tablespoon lemon juice

1 teaspoon vanilla extract

1 prepared 9-inch pie crust (store-bought or homemade)

1 cup all-purpose flour

1/2 cup rolled oats

1/2 cup brown sugar, packed

1/2 teaspoon cinnamon

1/2 cup unsalted butter, softened

Instructions
 

Preheat your oven to 375°F (190°C).

    In a medium bowl, combine cherries, granulated sugar, cornstarch, lemon juice, and vanilla extract. Toss to combine and let sit for 10 minutes.

      Prepare your pie crust by placing it in a 9-inch pie dish and pressing it down gently.

        Fill the prepared crust with the cherry mixture, spreading it evenly.

          In another bowl, mix together flour, rolled oats, brown sugar, and cinnamon. Add in softened butter and mix until crumbly.

            Sprinkle the crumb mixture evenly over the cherries in the pie.

              Bake in the preheated oven for 45-50 minutes, or until the filling is bubbly and the topping is golden brown.

                Allow to cool for at least 30 minutes before serving.
