Ingredients
  

1 cup all-purpose flour

1/4 cup powdered sugar

1/4 teaspoon salt

1/2 cup unsalted butter, cold and cubed

1 large egg yolk

2 tablespoons ice water

1 cup fresh or frozen cherries, pitted

1/4 cup granulated sugar

1 tablespoon cornstarch

1 teaspoon almond extract

1/2 teaspoon vanilla extract

1/4 cup sliced almonds

Mint leaves for garnish (optional)

Instructions
 

Prepare the Tart Crust:

    In a mixing bowl, combine the flour, powdered sugar, and salt. Add the cubed butter and use a pastry cutter or your fingers to mix until the mixture resembles coarse crumbs.

      Add the egg yolk and ice water. Mix until the dough comes together. Form it into a disk, wrap in plastic wrap, and refrigerate for at least 30 minutes.

        Make the Cherry Filling:

          In a medium saucepan, combine the cherries, granulated sugar, cornstarch, almond extract, and vanilla extract. Cook over medium heat, stirring occasionally until the mixture starts to bubble and thicken (about 5-7 minutes). Remove from heat and let cool slightly.

            Preheat the Oven:

              Preheat your oven to 375°F (190°C).

                Form the Tarts:

                  On a lightly floured surface, roll out the chilled tart dough to about 1/4 inch thickness. Cut out rounds to fit your tartlet pans (about 3-4 inches in diameter). Press the rounds into the pans.

                    Assemble the Tarts:

                      Spoon the cherry filling into each tart shell, filling them about 3/4 full. Sprinkle the sliced almonds on top of each tart.

                        Bake the Tarts:

                          Bake in the preheated oven for 20-25 minutes or until the crust is golden and the filling is bubbling. Remove from the oven and let cool for a few minutes in the pans before transferring to a wire rack.

                            Garnish and Serve:

                              Once cooled, garnish the tarts with fresh mint leaves, if desired. Serve warm or at room temperature.
