6 large eggs

1 cup shredded cheddar cheese

1 cup cooked and crumbled bacon

1/2 cup chopped bell peppers (any color)

1/4 cup chopped green onions

1/2 teaspoon garlic powder

Salt and pepper to taste

Optional: 1/2 cup spinach, chopped

Instructions
 

Preheat your oven to 350°F (175°C) and grease a muffin tin or line with muffin liners.

    In a large mixing bowl, whisk together the eggs until fully beaten.

      Stir in the shredded cheddar cheese, crumbled bacon, chopped bell peppers, green onions, and garlic powder. Season with salt and pepper to taste.

        If using, fold in the chopped spinach for an extra veggie boost.

          Pour the egg mixture evenly into the prepared muffin tin, filling each cup about 3/4 full.

            Bake in the preheated oven for 18-20 minutes, or until the muffins are puffed and a toothpick inserted in the center comes out clean.
