1 cup all-purpose flour

1/2 cup granulated sugar

1/4 cup butter, softened

2 large eggs

1 teaspoon baking powder

1/4 teaspoon salt

1/2 cup milk

1 tablespoon lemon zest

1/4 cup fresh lemon juice

1 teaspoon vanilla extract

1 cup heavy whipping cream

1/2 cup powdered sugar

Fresh lemon slices (for garnish)

Mint leaves (for garnish)

Instructions
 

Preheat the oven to 350°F (175°C) and grease a round cake pan.

    In a mixing bowl, combine flour, sugar, baking powder, and salt.

      Add butter, eggs, milk, lemon zest, lemon juice, and vanilla extract. Mix until smooth.

        Pour the batter into the prepared cake pan and bake for 25-30 minutes or until a toothpick comes out clean.

          Allow the cake to cool completely before removing from the pan.

            In a separate bowl, whip the heavy cream and powdered sugar until peaks form.

              Once the cake is cool, slice it in half and layer with whipped cream; repeat for the second layer.

                Frost the top and sides with remaining whipped cream.

                  Garnish with fresh lemon slices and mint leaves before serving.
